Maria’s Healthier version of Caramel Apples
Maria’s Healthier Caramel Apples:
4-6 apples depending on their size (I chose Granny smith – a firm apple works best)
6 Tablespoons of honey
½ cup of creamy almond or cashew butter (Cashew is my fave)
½ tsp of pure vanilla extract
Pinch of Himalayan salt
Melted dark chocolate for drizzling! (Mmmmm)
In a small post bring the honey to a rolling boil over medium heat. Let it go until it gets dark, this is normal (not too dark though).
Remove from heat and stir in the nut butter, vanilla and salt.
Prep your apples – Wash, dry, put popsicle sticks or thick skewers into the stem end! Dip the apples into the caramel – Use a spoon to get the top if you want. Allow access to drip off into the pot (you don’t want to waste any of the deliciousness!)
You can then dip into your optional toppings. (wait to do the chocolate until they harden) Place on a cookie sheet lined with parchment paper and put in the fridge until they harden.
Then, I drizzled with dark chocolate! Voila…a healthy alternative to a traditional Halloween treat!
