4-5oz chicken, cooked
¼ chopped onion
Green, red, or yellow peppers or veggies of choice
1½ oz. shredded cheese of choice
2 tsp sour cream
3-4 tsp salsa
In a large frying pan, heat 1 tsp olive oil at medium heat. Sauté onions and peppers 5-7 minutes or until tender. Add spices if desired.
Divide pita in two so that you have the two round parts. Place one pita on a baking tray or BBQ and add chicken, vegetables and cheese and place the remaining pita on top.
Cook in the oven or BBQ at 375F until veggies warm, cheese is melted and pita is crispy on both sides 7-10 minutes.
Serve with salsa, guacamole and sour cream.
